Roast pork ribs with mustard

- 8 good pork ribs
- A little olive oil
- A little lemon juice
- 8 large spoonfuls of Dijon mustard
- A little white wine
- Soya sauce
A great value roast for all the family
1 – Season the ribs and brush them with the olive oil and lemon juice. Arrange them in a roasting pan with the meaty side downwards, adding at least a glass of water, the white wine and the soya sauce.
2 - Evenly spread a spoonful of mustard on top of each rib. Cook in a preheated oven at 200° C for 20 minutes.
3 - Turn each rib, spooning the cooking juices over them, and return them to the oven for another 20 minutes or until the ribs are completely cooked. Spoon the cooking juices over the ribs from time to time. Do not allow the pan to dry out, adding a little wine or water if necessary.
4 - Place the ribs on a cutting board and separate them into smaller pieces.
Serve the just sliced meat with the cooking juices from the pan, fried potatoes and a green salad.
